Prior to opening their state-of-the-art Vegas casino, Fontainebleau Hotels asked us to create an upscale food hall for their approx. 900 gaming staff. The result: MiMo, based on the Miami Modern architecture of Fontainebleau’s flagship South Florida resort. Mrs. Maisel fans may remember the Miami hotel’s famous ‘Staircase to Nowhere’.

CLIENT: SQUARESPACE
Bidding to win food operations at Squarespace’s chic SoHo HQ, our creative, sales, and culinary teams collaborated to craft dining venues based on the web giant’s popular Super Bowl ads (shoutout to the Squarespace in-house agency—amazing work). We brought Zendaya’s tongue-twisting storefront to life as a deli, and went topsy-turvy on Dolly Parton’s 9 to 5 as a rotating day/night coffee bar/cocktail lounge. Squarespace loved the concepts so much they handed us a 5-year, $10 million contract.
The topiary squirrel from the Dolly ad lives a second life inside the Squarespace HQ, near the elevators. So we featured it in our plant-forward venue, a play on Greenwich Village.

For its San Jose HQ, Samsung—a South Korean company with a high West Coast employee population of first- and second-generation Korean immigrants—wanted a deeply authentic cuisine experience. I worked with Bay Area chef Deuki Hong to craft food hall concepts rooted in East Asian flavors and traditional cooking.
